7 Breakfast Dishes You Can Make Using Leftover Khichdi

Khichdi is a healthy, comforting, and easily digestible meal, quite popular in India. Whether you are not feeling well, having a gloomy day, or not in the mood to cook, a bowl of khichdi is the most hassle-free food you can make. Soak lentils and rice for 15-20 minutes. Add to the pressure cooker along with salt to taste and turmeric powder, and cook for 2-3 whistles. Your meal is done, and you can elevate the flavours by tempering it.

However, the struggle can be to finish khichdi. Many times, you can end up making more than what you can consume. What do you do with leftover khichdi? Instead of discarding it, you can use it the next morning to prepare delicious and nutritious breakfast dishes. Here are a few that are a must-try for you.

Khichdi Uttapam

All you need for uttapam is a thick batter and a few fine-chopped vegetables. Give a good whisk to leftover khichdi and spread it on a hot skillet in the shape of a thick pancake. Add chopped onions, green chillies, capsicums, and fresh coriander leaves on the top and cook on both sides. You can enjoy it with coconut chutney or sauce.

Khichdi Poha

For this comforting meal, heat a kadhai, and add some oil to it. Fold in mustard seeds, green chillies, and curry leaves. Once the seeds start to crackle, add chopped onions and turmeric powder. As the onions become translucent, pour in leftover khichdi and soaked flattened rice (poha). Mix it well and serve the dish hot with a garnish of coriander leaves and a drizzle of lemon juice.

Khichdi Paratha

Khichdi paratha is the easiest recipe you can have in the morning. Mix the leftover khichdi with wheat flour and add some salt, carom seeds, red chilli powder, finely chopped green chillies, and amchur (mango) powder on the top. Knead the dough and make crispy paratha that you can pair with your favourite chutney, sauce, and raita.

Khichdi Frittata

Khichdi, a traditional Indian dish, can be used to make frittata, an Italian delicacy. Beat eggs and khichdi together. Add chopped vegetables, grated cheese, and a few spices to the combination. Pour this concoction into a baking tray and cook in the oven until the top turns golden brown. Slice the frittata and enjoy with ketchup.

Khichdi Upma

Much like khichdi, upma is also a quick breakfast dish you can make in under 30 minutes. Prepare the tempering of oil, curry leaves, mustard seeds, and green chillies. Pour in leftover khichdi into the pan and stir it until heated through. Add garnishing of freshly chopped coriander leaves and serve the dish hot.

Khichdi Pancakes

Leftover khichdi can be used to make a desi version of pancakes. Mix the dish with gram flour, chopped spinach leaves, spices, and grated carrots. Take a ladleful of this concoction and pour it into the pan. Cook both sides until they turn brown, and enjoy it with yoghurt or chutney. You will definitely love savoury pancakes over sweet ones if you don’t have a sweet tooth.

Khichdi Breakfast Bowl

For a breakfast bowl, you need to strike a balance between flavours, protein, and carbohydrates. Reheat the leftover khichdi and serve it with some sauteed vegetables, greeted cheese, and scrambled eggs. Add some salsa, sliced avocado, and hung curd on the top, and enjoy.
