A good marinade is as vital as spices to Indian cuisine. Be it scrumptious kebabs or a delicious curry, a marinade can completely change the flavour and texture of a dish. From adding flavours, tendering the texture and sealing in moisture, a marinade gives a complete makeover to a dish. A good marinade generally has an acid, a flavourful condiment or spice and an ingredient composed of fats. Indians usually use lime juice or yogurt as an acidic element, ginger-garlic paste as a flavouring element and oil as a fatty element. Are you planning to make something delicious this week? Green Marinade 

Be it Hariyali Chicken or Amritsari fish, a green marinade is what changes the dish altogether. 


 - 1 cup coriander leaves

 - 1 cup mint leaves

 - 1 tbsp ginger-garlic paste

 - 1 tsp lime juice 

 - 2 green chillies, deseeded

 - 1 tsp olive oil or vegetable oil

 - Salt


Blend all the ingredients to make a fine paste and marinate chicken or fish for 30 minutes. 

Tikka Marinade

Marinate your paneer or chicken with this marinade to have a plate of delicious kababs. 


 - 1 cup yogurt 

 - 1 tbsp ginger-garlic paste

 - 1 tsp tandoori masala powder

 - 1 tsp red chilli powder

 - 1 tsp turmeric powder

 - 1 tsp cumin powder

 - 1 tsp coriander powder 

 - A drizzle of oil

 - Salt

 Method- Add all the ingredients to a bowl. Marinade chicken or paneer for an hour. 

Asian Tofu Marinade

Make an Asian-style grilled Tofu or stir-fry by using this marinade. 


 - 2 tbsp soy sauce 

 - 1 tbsp sesame oil 

 - 1 tbsp vinegar

 - ½ tbsp ginger-garlic paste

 - ¼ tsp sugar

 - 1 tbsp chilli sauce

Method- Mix all the ingredients in a bowl and marinate the Tofu before grilling or frying them. 

Basic Chicken Curry Marinade

Whip up a basic Indian chicken curry with this marinade recipe. 


 - 1 cup curd

 - 1 tbsp ginger garlic paste

 - 1 tbsp turmeric powder

 - 1 tsp red chilli powder 

 - 1 tbsp kasuri methi 

 - Salt, according to taste

Method- Marinate the chicken pieces in this marinade for an hour or two before pan-frying them.
