Simple Yet Toothsome Vegan Snacks For Students

Snacks are truly a godsend. After a hard day of work or studying, it’s the best way to unwind and chip at your woes. 

Coming up with snack ideas that are healthy and also fit a vegan diet may be challenging. Most of these require basic pantry ingredients and not more than twenty minutes to prepare. They can also be stored well in the fridge for two weeks and in the freezer for two months.


Gluten-Free Chocolate Peanut Butter Energy Balls

If you love chocolate and peanut butter, this recipe is for you which also subs for a great dessert.

You’ll need

1/2 cup of peanut butter

2 pitted dates

1/2 tsp of vanilla essence

A pinch of salt

1/2 cup of shredded coconut

75 g of dairy-free dark chocolate 


Instructions

Melt the chocolate in a microwave. 

In a food processor, blend the peanut butter, dates, vanilla essence and salt until a smooth consistency is reached. 

Mix it in the coconut shreds.

Make small balls using the batter.

Depending on your liking, either dunk the balls in chocolate or drizzle lightly.

Refrigerate the balls to enjoy later.


Candied Almonds

These almonds are made for munching while studying or bored. With just five ingredients, you have a snack that’ll make you give up those unhealthy cookies in a jiffy. And you can always swap the almonds for any other nut.

You’ll need

2 cups of almonds

2 tbsp of sesame seeds 

1 pinch of cayenne pepper

1 tbsp of coconut oil

2 tbsp of honey or maple syrup 


Instructions 

Toast the almonds in a pan or an oven pre-heated at 180 degrees Celsius for 5 minutes.

In a separate bowl combine the sesame seeds, cayenne pepper, oil and honey.

After the nuts are golden-brown, toss them in the honey mixture and toast for another five minutes.

Allow the nut to cool down completely before enjoying it.


Roasted Edamame

You’ll need 

Two cups for thawed edamame

1 1/2 tsp of curry powder


Instructions 

Toss your edamame in the curry powder.

Roast in the edamame in 190 degrees celsius oven for 30-40 minutes.
