• 1 tablespoon Lime Juice
• 2 tablespoon avocado oil
• 0.5 cup homemade mayo or purchased paleo mayo
• 3 tablespoon plain unsweetened almond milk
• 3 tablespoon cilantro minced
• 2 teaspoon Fresh lime juice
• As required Sea salt and black pepper
• 6 cup mixed greens roughly chopped
• 1 cup cherry tomatoes halved
• 1 medium bell pepper thinly sliced
• 1 medium avocado sliced
• Plantain chips homemade or store bought
• 0.5 small onion thinly sliced
• 1 jalapeno pepper thinly sliced
• Extra cilantro for garnish
