• 4 Cloves garlic, peeled and minced
• 6 cup Chicken or vegetable stock
• 1 can Full fat coconut milk
• 1.5 pound Yukon gold potatoes, diced
• 1 Granny smith apple, cored and diced
• 1.5 tablespoon Old bay seasoning
• 2 Bay leaves
• As required Fine sea salt and freshly cracked black pepper
