• 1 Bag dried black eyed peas, soaked overnight and rinsed
• 1 tablespoon Vegetable oil
• 1 Medium onion, chopped
• 2 Stalks celery, chopped
• 3 Cloves garlic, minced
• 1 cup 1 smoked ham hock chopped smoked ham
• 1 Carton progressotm chicken broth
• 1 can Diced tomatoes with green chiles, undrained
• 1 Dried bay leaf
• As required Salt to taste
• 6 cup Hot cooked white rice
