• 1 Onion, diced
• 2 Bell peppers, diced
• Salt and ground black pepper

• 1.5 pound Boneless, skinless chicken breasts
• 1 can Fire roasted diced tomatoes, juice and all
• 1 can Black beans, drained and rinsed
• 1 can Pinto beans, drained and rinsed
• 1 can Shoe peg corn, drained and rinsed
• 2 can Green chilis
• 3 cup Low sodium chicken broth
• 3 tablespoon Taco seasoning
• Optional toppings:diced avocado, lime wedges, sour cream or plain greek yogurt, shredded cheddar cheese, sliced green onions, corn tortilla chips, hot sauce
