• 8 Boneless skinless chicken thighs
• 1 Small eggplant peeled and sliced longways
• 1 cup Flour
• 1 cup Seasoned bread crumbs
• 2 cup Eggs lightly beaten with 1/4 of water added to make your eggwash
• 2 cup Mushroom
• 0.25 pound Prosciutto sliced very thin
• 0.25 pound Provolone cheese
• Olive oil as needed to saute chicken and fry eggplant
• 5.5 cup Marinara sauce
• 5.5 cup Chicken stock
• 1 ounce Splash of white wine
• 0.5 teaspoon Granulated garlic
• 0.5 teaspoon Granulated onion
• 0.5 teaspoon Black pepper
• 2 tablespoon Grated romano cheese
