Ingredients For One Pot Chicken Enchilada Soup Recipe

• 3 cup Chicken stock or broth low sodium
• 2 cup Cooked shredded or chopped chicken i just use a rotisserie chicken
• 14 ounce Enchilada sauce i used o organics enchilada sauce
• 15 ounce Can black beans rinsed well, drained
• 1 cup Frozen Corn Kernels
• 15 ounce Can diced tomatoes fire roasted tomatoes are delicious in this recipe
• 4 ounce Can chopped green chiles
• As required Salt And Pepper To Taste
• 4 ounce Cream cheese room temperature, cubed
• 4 ounce Sharp cheddar cheese grated, about 1 cup
• 4 ounce Monterey jack cheese grated, about 1 cup
• Cilantro, sour cream, tortilla chips or strips, avocado, diced tomato, shredded cheese, green onions
