Keep The Dough Soft, Not Stiff

Kulcha dough should be soft and a bit sticky rather than just as firm as roti dough. Use the yoghurt and a little oil or ghee to give it softness, adding water slowly while kneading. A stiff dough will be more difficult to stretch and can turn a bit chewy once it is cooked, so resist the desire to add excess flour.

Give The Dough Enough Resting Time

Do not roll the kulchas instantly after you have kneaded the dough. Cover the dough and let it rest for about 1 two 2 hours so that the gluten relaxes and the dough becomes easy to handle. Do Not Roll The Kulcha Too Thin

A very thin kulcha can be cooked quickly but will not have the soft, puffy centre you like in restaurants. Divide the dough evenly and then gently stretch or roll each portion to the medium thickness. If you are filling the kulcha, seal the stuffing properly and then flatten it so the dough does not tear or rip around the edges.

Get The Tawa Really Hot

The tawa needs to be properly hot before you place the rolled kulcha on it. A hot surface helps the dough puff and makes those small browned patches before the bread has time to dry out. Cook one kulcha at a time and do not keep the flame too low, particularly during the first few seconds when you have placed it on the hot tawa.
