Zucchini Chocolate-Chip Muffins For Healthy Tea-Time Snacking

Tea-time is the time of the day when everyone likes to indulge in their cravings with hot coffee or tea. Although this affair doesn't need to go against your fitness goals. This healthy muffin recipe will make sure that you get your nutrients without sacrificing any flavour.

Ingredients

1 cup all-purpose flour 1/2 cup whole wheat flour 1/2 cup oats 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon 1/4 cup unsweetened applesauce 1/4 cup olive oil or melted coconut oil 1/2 cup honey or maple syrup 2 eggs 1 tsp vanilla extract 1 cup grated zucchini 1/2 cup dark chocolate chips

Step 1

Preheat the oven to 175°C/350°F. Line the muffin tin. Blend the dry components in a bowl.

Step 2

In a separate bowl, mix applesauce, oil, honey, eggs, and vanilla.

Step 3

Mix wet and dry ingredients; mix in chocolate chips and zucchini. Pour batter into muffin tins, filling 3/4 full.

Step 4

To ensure a clean toothpick, bake for 18 to 20 minutes. After five minutes in the pan, remove the muffins and let them cool on a rack.
