Want to cut the refined store-bought biscuits for your tea-time? These maida-free coconut cookies can be a perfect option that are crisp from the outside, soft from within, and can be made with simple kitchen ingredients without having to rush to the grocery store.
2 cups desiccated coconut 1 cup almond flour 2 tbsp cornstarch 1 tsp baking powder ¼ tsp salt 2 eggs ¼ cup honey 1 tsp vanilla extract 2 tbsp melted coconut oil
In a bowl, mix desiccated coconut, almond flour, cornstarch, baking powder, salt, eggs, honey, vanilla extract, and coconut oil to make soft dough.
Line a baking tray with parchment paper. Now, take portions from the kneaded dough, roll them to make small balls, and then flatten them by patting gently.
Preheat the oven to 170°C and then bake the cookies for about 15 to 20 minutes. You should see the edges turn lightly golden and firm up to know they are baked through.
Take the tin out of the oven and leave it to cool down, as the cookies turn crisp, perfectly if not taken out instantly.
Once the cookies have cooled down, take them out of the tin and store them in an airtight box.
