Eating a salad doesn't always have to be a punishment. This healthy egg salad combines the goodness of boiled eggs with irresistible chaat flavours and is a perfect balance of nutrients and flavours.
2 eggs ½ tbsp tomato ketchup 2 tsp tamarind extract ½ tsp lemon juice ½ tsp roasted cumin Salt to taste ½ slit green chilli ½ spring onion, chopped 2 tbsp boondi
Boil the eggs. Remove from the heat and put under ice-cold water to stop the cooking. Peel the eggs.
Chop them into small pieces. Set it aside.
In a small bowl, add tomato ketchup, tamarind extract, lemon juice and roasted cumin. Salad dressing is ready.
In a mixing bowl, add the eggs. Add the chopped spring onions, green chillies and boondi.
Give it a toss. Then add the salad dressing. Give it a few good tosses until the eggs and veggies are covered in it.
Adjust seasoning if needed. Serve egg chaat salad immediately or store in air-tight container for later.
