A comforting bowl of udon noodles brings together thick, silky noodles and a savoury broth that feels like a warm hug. It’s quick, hearty, and perfect for lazy evenings when you crave something soothing yet satisfying.
200g udon noodles 3 cups vegetable or dashi broth 1 tbsp soy sauce 1 tsp sesame oil ½ cup sliced mushrooms ½ cup chopped spring onions
Boil the udon noodles until soft and chewy, then rinse to remove extra starch.
Heat broth in a pot and add soy sauce, mushrooms, and sesame oil.
Let the soup simmer for 5-6 minutes so the flavours deepen.
Add noodles to the broth and toss gently to soak up the flavour.
Serve hot, topped with spring onions for freshness and crunch.
