Firni is a milk-based delicacy that is somewhat different from rice kheer, yet is extremely similar. It is usually made during festival seasons, particularly as iftar recipes during the auspicious months of Eid and Ramadan.
75 grams of basmati rice 1 litre of full-fat milk Sugar to taste Salt to taste ½ teaspoon of cardamom powder 5 strands of saffron
Wash and soak the basmati rice for 30 minutes. Grind into a powder form.
Roast the cardamom and grind it into a fine powder.
Mix the rice and cardamom powder. Pour in some milk.
In a pot, pour more milk. Heat the milk. Add the milk, rice and cardamom mixture into it.
Add saffron. Keep stirring until thick. Add some sugar and sprinkle with more cardamom powder.
Set in a mud bowl. Let it rest for 24 hours. Serve firni the next day.
