Yakhni Pulao Recipe With A Fragrant Symphony Of Rice And Spices

Yakhni Pulao is a fragrant rice dish made with basmati rice, tender meat and a spiced broth called Yakhni. It is a perfect dish for festive meals served with raita and salad.

Ingredients

2 cups basmati rice 500g chicken 1 sliced onion 1 tbsp ginger-garlic paste 2-3 slit green chillies 1/2 cup yoghurt 4-5 cups water Whole spices: 2-3 cardamom, 1 cinnamon stick, 4-5 cloves, 1 bay leaf 1 tsp cumin seeds Salt (to taste) 2 tbsp oil For Yakhni: 1 tsp fennel seeds 1 tsp coriander seeds 1 small muslin cloth

Step 1

Tie the fennel and coriander seeds in a muslin cloth.

Step 2

Take a pot, boil water with the muslin pouch, chicken, salt and whole spices until the meat is tender, then strain the stock.

Step 3

Heat oil in a pot and fry onions until they turn golden, then add ginger garlic paste, green chillies, yoghurt and let it cook.

Step 4

Now add the meat, cook and mix it well.

Step 5

Add soaked rice and yakhni in a 1:2 ratio, then cover and cook on low heat until the rice is fluffy.

Step 6

Serve it with salad and raita!
