These vegan sushi rolls are crisp, colourful, and easy to put together. Packed with fresh vegetables and seasoned rice, they make a light and balanced meal for World Vegan Month.
1 cup cooked sushi rice Nori sheets Sliced cucumber, carrot, and avocado 1 tbsp rice vinegar Soy sauce for serving
Mix rice vinegar into the warm cooked rice and let it cool slightly.
Spread a thin layer of rice on a nori sheet.
Arrange the vegetables along one edge and roll tightly.
Slice into bite-sized pieces and serve with soy sauce.
