This vegan omelette is made with gram flour (besan) instead of eggs and packed with colourful vegetables. It’s protein-rich, easy to make, and perfect for breakfast or a light lunch.
1 cup gram flour (besan) ¼ tsp turmeric ½ cup chopped onion, tomato, and spinach ½ tsp cumin seeds Salt and pepper to taste Water and oil as needed
In a bowl, combine gram flour, turmeric, cumin, salt, and pepper. Add water gradually to form a smooth batter.
Stir in the chopped vegetables and mix well.
Heat oil on a non-stick pan and pour a ladleful of batter, spreading it gently.
Cook until golden on both sides, then serve with chutney or tomato relish.
