This creamy, spreadable vegan cheese made from cashews is a dairy-free dream. Perfect for crackers, sandwiches, or pasta, it’s rich, nutty, and easy to prepare with simple ingredients.
1 cup raw cashews (soaked for 4–6 hours) 2 tbsp nutritional yeast 1 tbsp lemon juice 1 garlic clove Salt to taste ¼ cup water
Drain and rinse the soaked cashews, then add them to a blender with all remaining ingredients.
Blend until smooth, adjusting water for desired consistency.
Taste and adjust seasoning with more salt or lemon if needed.
Chill before serving as a spread or topping for vegan dishes.
