Panchratna dal brings together five different lentils, each contributing its own texture and flavour. The dish is valued for its balance and is commonly eaten as a wholesome meal with rice or rotis. Cooking the dals together allows them to blend while still retaining character.
2 tbsp each toor dal, moong dal, masoor dal, chana dal, urad dal 1 onion, finely chopped 2 tomatoes, chopped 1 tsp ginger-garlic paste 1 tsp cumin seeds ½ tsp turmeric powder 1 tsp coriander powder Salt to taste 2 tbsp oil or ghee
Soak and cook all five dals together until soft but not mushy.
Heat oil or ghee, add cumin seeds, then sauté onion until golden.
Add ginger-garlic paste, tomatoes, and spices; cook until oil separates.
Stir in cooked dals and simmer for 10 minutes.
Serve hot with rice or rotis.
