Winter special panjiri is a distinguished North Indian delicacy celebrated for its intricate flavour composition and nutrient-rich character. Meticulously slow-roasted in ghee, it exudes a deep, nutty aroma layered with earthy warmth. Its granular yet velvety texture embodies culinary precision, making it exceptional for serving traditional refinement.
100 g whole wheat flour 50 g semolina 75 g ghee 30 g crushed almonds 30 g chopped cashews 25 g melon seeds 25 g grated dry coconut 50 g powdered sugar 10 g edible gum (optional) A pinch of cardamom powder
Heat ghee in a heavy pan and roast wheat flour and semolina on low heat until golden and aromatic.
In another pan, lightly toast almonds, cashews, melon seeds, and coconut until fragrant.
If using edible gum, fry it separately until puffed, then crush it lightly.
Mix the roasted flour, toasted nuts, and crushed gum together. Let it cool completely.
Add powdered sugar and cardamom, mix evenly, and store in an airtight container.
