With blueberries, strawberries, mulberries and raspberries being spotted around local markets this season, their vibrant flavour and juiciness forms the perfect foundation for a mixed berry parfait. The layered dessert is a delicious way to incorporate seasonal fruit into innovative options best enjoyed after a meal or as a snack.
1 cup mixed berries, fresh 1 cup mixed berries, frozen 2 cups Greek yoghurt 2 tablespoons chia seeds, soaked 2 tablespoons honey/maple syrup Juice of 1 lemon 1 tablespoon lemon zest ½ cup granola of choice
Combine the frozen berries, maple syrup, lemon zest and juice in a saucepan to cook over low heat for 10-12 minutes.
Once they burst and release their juices, cook further for 5 minutes until slightly thickened before cooling completely.
To assemble the parfait, spoon some Greek yoghurt into a tall serving glass followed by some granola, soaked chia seeds, the cooled compote and fresh berries.
Repeat the process until the glass is full and each layer is visible on the outside.
Refrigerate for an hour to set the dessert before serving cold or at room temperature.
