Why Tawa Fry Garlic Baingan Deserves A Spot On Your Weekend Table

Weekend calls for recipes that feel amazing without requiring long hours in the kitchen. Tawa fry garlic baingan shows how to turn a simple brinjal into a smoky one, having crispy edges and lots of garlic, making it the kind of pleasant side dish perfect to pair with dal rice and parathas. 

Ingredients

500 g brinjal (baingan) 12 garlic cloves 2 tbsp rice flour 1 tbsp gram flour 1 tsp red chilli powder ½ tsp turmeric powder 1 tsp coriander powder ¾ tsp salt 3 tbsp oil 1 tbsp chopped coriander 1 tsp lemon juice

Step 1

Take brinjals and slice them into thick rounds, and sprinkle salt on them to remove excess salt and make them crisp. 

Step 2

Crush garlic to make a coarse paste by blending spices to give it its classic garlicky flavour.

Step 3

Coat the brinjal slices with rice flour, gram flour, and the prepared garlic spice mixture so that every piece makes a crisp, golden surface.

Step 4

Heat the tawa or pan with a little oil and place the slices on it so that it cooks slowly.

Step 5

Flip the slices on the other side until they turn deep golden amd develops rich flavour and turn crisp.

Step 6

Lastly, add some lemon juice from the top and garnish with chopped coriander before serving and pair with dal, roti, or rice for a hearty meal.
