Panjiri is best defined as a nutrient-dense, healthy, North Indian snack often enjoyed in winter. Made from ingredients like whole wheat flour, jaggery, ghee, edible gum, and dried fruits and nuts, this nutritious dish is also an ideal postpartum snack. To try this healthy sweet dish this winter, follow the Panjiri recipe.
1 cup whole wheat flour (atta) ½ cup sugar 2 tbsp jaggery powder (gud) 4 tbsp ghee (clarified butter) ½ cup Gond (Edible Gum) ½ cup cashews or ½ cup almonds ¼ cup raisins
Heat some ghee in a heavy-bottomed pan. Add cashew, jaggery, almonds, and edible gum and fry until crisp and golden. Remove and set aside to cool.
Add remaining ghee and the whole wheat flour to the same pan. Roast the flour over low-to-medium heat. Keep stirring until it turns golden brown.
Next, turn off the heat and let the roasted flour cool slightly. While it is still warm, add the roasted cashews, almonds, raisins, sugar, and edible gum. Give everything a thorough mix.
Once everything is combined well, allow the panjiri to cool down completely. Garnish it with some chopped cashews and raisins and serve.
