Minestrone is a flexible Italian soup built around vegetables, beans, and a small amount of pasta or rice. Slow simmering allows the flavours to deepen while keeping the soup light and filling.
2 tbsp olive oil 1 onion, chopped 2 cloves garlic, chopped 1 carrot, diced 1 celery stalk, sliced 1 cup chopped tomatoes 1 cup mixed vegetables (zucchini, green beans, potato) ½ cup cooked kidney beans or cannellini beans 4 cups vegetable stock ¼ cup small pasta or rice Salt and black pepper to taste 1 tsp dried oregano or basil
Heat olive oil, sauté onion and garlic until soft.
Add carrot, celery, and other vegetables, cook briefly.
Stir in tomatoes, beans, stock, salt, and herbs.
Simmer for 20 minutes, then add pasta or rice.
Cook until tender and serve hot with crusty bread.
