White dhokla, or khatta dhokla, the traditional Gujarati snack, is made with rice and urad dal-based batter. With a subtle tangy flavour and a fluffy texture, here’s how you can make white dhokla at home.
For the Batter: 1 cup rice ½ cup urad dal ½ cup curd Salt to taste For Tempering: 2 tablespoons oil 1 teaspoon mustard seeds 2-3 slit green chillies 8-10 curry leaves A pinch of hing For Garnishing: 2 tablespoons freshly grated coconut 2 tablespoons chopped coriander leaves
Wash and soak rice and urad dal. Drain and grind till smooth. Add curd and salt. Let it ferment.
Grease a pan with some oil and boil water in a steamer.
Pour the batter into a pan. Cover with a lid and steam for 15-20 minutes.
Prepare the tempering by sauteing green chillies, curry leaves, and hing.
Let the dhokla cool down and drizzle the tempering over it.
Garnish with grated coconut and coriander leaves. Serve with a chutney.
