Strawberry shortcake works best as a relaxed, assemble-at-the-last-minute dessert. Fresh fruit, lightly sweetened cream, and soft cake layers keep it approachable and suitable for sharing. It is designed for casual gatherings rather than formal plating.
1 plain sponge cake, sliced horizontally 2 cups fresh strawberries, sliced 2 tbsp sugar 1½ cups whipping cream 2 tbsp icing sugar ½ tsp vanilla extract
Toss strawberries with sugar and set aside for 15 minutes.
Whip cream with icing sugar and vanilla until soft peaks form.
Layer cake with cream and strawberries.
Repeat layers and finish with fruit on top.
Chill briefly and serve in slices or scoops for easy sharing.
