A chilled glass of watermelon mojito instantly refreshes when the summer heat feels a bit too much to handle. It feels light, has a bit of minty flavour, and is naturally sweet, making it a perfect summer cooler to sip on during hot afternoons.
2 cups watermelon (seedless, chopped) 10–12 leaves fresh mint 1 tbsp lemon juice 1 tsp sugar or honey (optional) 1 cup chilled soda or sparkling water 4–5 cubes of ice
In a blender, add the chopped watermelon and blend until smooth. Strain if you like a cleaner and clearer juice without any pulp.
Take a tall glass and, in it, lightly crush the mint leaves with some lemon juice and sugar with the help of a spoon.
Now, add the ice cubes, then pour in the freshly blended watermelon juice.
Top it up with some chilled soda or sparkling water as per preference. Adjust the quantity based on how light or strong you like the flavour.
With a mixing spoon, stir everything to mix flavours without losing its fizz.
Garnish with some extra mint leaves or a small watermelon wedge, if you like and serve immediately or keep in the fridge for some time for a cooler version.
