Looking for a refreshing summer treat? These watermelon-green tea ice popsicles are the perfect way to cool off on a hot day. The combination of sweet watermelon and earthy green tea makes for a delicious popsicle that is as nutritious as it is tasty.
3 cups cubed, seedless watermelon 1⁄4 cup honey 1⁄4 cup freshly squeezed lemon juice 1 green tea bag 1 1⁄2 cups water Popsicle moulds
In a blender, puree the cubed watermelon until smooth. Pour into a bowl through a mesh strainer to remove any excess pulp.
In a small saucepan, bring the 1 1⁄2 cups of water to a gentle boil. Remove from the heat, add the green tea bag and let steep for 5 minutes.

Stir the honey and lemon juice into the strained watermelon puree until combined. Then stir in the cooled green tea concentrate. Pour the watermelon-green tea mixture into popsicle moulds.
Insert popsicle sticks and freeze for at least 6 hours until completely solid.
Run the moulds under warm water to help release the popsicles before serving.
