Watermelon Gazpacho is a chilled, refreshing summer soup with watermelon, cucumber, and tangy vinegar for a light and flavourful treat. This soup is not just a feast for the taste buds but also for the eyes, making it a crowd pleaser for any summer gathering.
4 cups cubed watermelon 1 cup peeled and diced cucumber 1 chopped red bell pepper 1 chopped red onion 2 tbsp olive oil 2 tbsp red wine vinegar ½ tsp salt ¼ tsp black pepper Fresh mint or basil for garnish
Blend watermelon, cucumber, red bell pepper, onion, olive oil, red wine vinegar, salt and pepper.
Blend until it gets smooth.
Refrigerate it for 1-2 hours to chill.
Pour them into bowls and garnish with fresh mint or basil.
