When monsoon rains pour outside, few treats match the comforting aroma of an apple pie baking in the oven. The combination of crisp apples cooked in warm cinnamon, nutmeg, and brown sugar creates a sweet filling that pairs wonderfully with a flaky, buttery crust. As the pie bakes, the fruit softens into a luscious layer that holds its shape when sliced. Serving a slice warm alongside a scoop of vanilla ice cream offers a lovely contrast of temperatures. It is the perfect weekend dessert to share with family while listening to the rain.
2 pre-made pie crust sheets  4 large apples, peeled and thinly sliced  1/2 cup brown sugar  1 teaspoon cinnamon powder  1/4 teaspoon nutmeg powder  1 tablespoon lemon juice  2 tablespoons all-purpose flour  2 tablespoons butter, cut into small cubes
Toss the sliced apples in a large bowl with brown sugar, cinnamon, nutmeg, lemon juice, and flour until evenly coated.
Line a pie dish with the bottom pastry sheet and fill it with the spiced apple mixture, dotting the top with small cubes of butter.
Cover with the second pastry sheet, crimp the edges tightly to seal, and cut a few small slits on top to let steam escape.
Bake at 190 degrees Celsius for 45 to 50 minutes until the crust turns golden brown and the apple filling bubbles gently.
