Allam Chutney is a spicy Andhra-style ginger chutney with tamarind, jaggery, and red chillies. Its bold, tangy flavour pairs perfectly with dosa, idli, or rice, adding instant zest to every bite.
½ cup peeled and roughly chopped ginger 2 tbsp seedless tamarind 2 tbsp grated jaggery 3-4 dry red chillies 1 tbsp urad dal 1 tbsp chana dal 1 tbsp oil Salt to taste Tempering: 1 tsp mustard seeds 1 sprig of curry leaves 1 tsp oil
Heat 1 tbsp oil in a pan and fry urad dal, chana dal, and red chillies until golden brown.
Add ginger pieces and sauté for 2-3 minutes till aromatic.
Cool and grind with tamarind, jaggery, salt, and a little water to form a thick chutney.
In another pan, heat 1 tsp oil, splutter mustard seeds and curry leaves, and pour over the chutney
Serve with dosa, idli, or upma for a spicy, tangy kick!
