Dhokla is the classic Gujarati snack that has to be everyone’s favourite. With this recipe, you can make the soft and spongy dhokla in a pressure cooker. Here’s how you can make it without a steamer.
For The Batter: 1.5 cups besan 3/4 cup water 1/2 tsp salt 1/4 tsp sugar 1/4 tsp turmeric powder 1 tsp baking soda 1 tsp oil For The Tadka: 2 tsp oil 1/2 tbsp mustard seeds 3-4 green chillies 12-14 curry leaves 1 cup water 1/2 tsp salt 4-5 tsp sugar Juice of 1/2 lemon
Whisk besan, water, salt, sugar, and turmeric powder till you get a smooth batter. Let it rest.
Add water to your pressure cooker. Place a metal stand in the cooker to elevate the surface.
Add baking soda and pour the batter into a greased tray. Place it in the cooker.
Close the lid without the whistle and steam for about 15 minutes.
Heat some oil, add mustard seeds, curry leaves, and chopped green chillies, and saute them.
Pour some water and add salt, sugar, and lemon juice. Let the tadka simmer.
Cut the dhokla into pieces and pour the tadka over them, coating all the pieces, and serve.
