Samak ki kheer is a vrat-special sweet dish made with samak rice, milk, sugar, and dry fruits. Light, gluten-free, and nutritious, it’s enjoyed during Navratri and fasting days for its quick cooking, nutty flavour, and easy digestibility.
½ cup samak rice 4 cups full-cream milk ¼ cup sugar 3-4 crushed green cardamoms 7-8 chopped cashews 7-8 chopped almonds 7-8 chopped pistachios 7-8 raisins 1 tbsp ghee
Wash samak rice thoroughly and soak for 15–20 minutes.
Heat milk in a heavy-bottom pan and bring it to a boil.
Add soaked samak rice and cook on low flame, stirring occasionally, until the rice softens and the milk thickens.
Add sugar and mix well until dissolved.
Stir in cardamom powder, chopped nuts, and raisins.
Cook for another 3-4 minutes until creamy.
