When vrat meals begin to feel repetitive, try making this paneer sabji to add some variety to your fasting plate. Soft paneer, light vrat-friendly spices and a creamy gravy make each bite satisfying without even a hint of onion or garlic.
200 g paneer, cubed 2 medium tomatoes, pureed ½ cup curd, whisked 1 green chilli, finely chopped 1 tsp cumin seeds ½ tsp ginger, grated ½ tsp black pepper powder ½ tsp roasted cumin powder ½ tsp red chilli powder, optional ½ tsp rock salt, or sendha namak 1 tbsp ghee ½ cup water 1 tbsp fresh coriander, chopped
In a pan, heat ghee and add cumin seeds to it. Let them splutter, then add some grated ginger and green chilli to it.
To this, add tomato puree, black pepper, roasted cumin powder, and sendha namak to taste and cook until the tomatoes turn soft.
Lower the flame and then slowly add the whisked curd and mix continuously so that it does not split.
Now, add the paneer cubes and water to this and let it simmer for a few minutes.
In the end, add fresh chopped coriander and serve hot with samak rice, kuttu roti or vrat-friendly puris.
