Known for a deep culinary connection with the Mekong Delta in Southern Vietnam, this Vietnamese lemongrass chicken recipe is all about citrusy flavours and fragrance. All it takes is a perfect marination, careful pan-searing, and some garnishing.
5 cups of chicken 4 stalks of fresh lemongrass 4 cloves of garlic 2 shallots 4 tbsp fish sauce 2 tbsp sugar 1 tbsp soy sauce 1 tbsp oil ½ tbsp pepper 2 chilies 2-3 tsp lime juice ¼ cup cilantro
Peel the lemongrass stalks and slice the white or light-green parts thinly.
In a bowl, mix chicken, lemongrass, lime juice, garlic, shallot, fish sauce, soy sauce, sugar, oil, and pepper. Marinate for 30 minutes.
Heat oil in a skillet and add the chicken. Sear for 5 minutes without moving and then stir-fry until fully cooked.
Once ready, garnish with some fresh cilantro, chilli, and lime juice.
