Vibrant Red Beetroot Chutney That You Can Replicate At Home

Beetroot chutney is a simple and healthy recipe which is easy to make and the perfect condiment when paired with roasted vegetables. You can also spread it on parathas and bread to make wraps and sandwiches.

Ingredients

1 peeled and chopped beetroot 1/4 cup grated Coconut 2-3 green chillies 1 tsp tamarind Pulp 2 tbsp roasted gram 1/2 piece chopped ginger 1/2 tsp salt 1 tsp oil For Tempering: 1/2 tsp mustard seeds 1 dry red chilli 6-8 curry leaves 1 tsp oil (for tempering)

Step 1

Saute the beetroot in oil for 2-3 minutes, cover and cook until it turns soft.

Step 2

Blend the cooked beetroot, coconut, green chillies, tamarind, roasted gram, ginger, salt into a paste.

Step 3

Heat oil, add mustard seeds, dry red chilli, curry leaves and let them splutter.

Step 4

Pour the tempering over the chutney and mix it well.

Step 5

Enjoy as a side dish!
