Beetroot raita adds a bright, eye-catching pop of colour to the table while offering cooling, creamy flavours. The natural sweetness of beetroot blends well with curd, creating a balanced side dish that pairs beautifully with pulao, biryani or simple rotis.
1 cup curd 1 cup grated beetroot ½ tsp roasted cumin powder Salt and pepper Coriander for garnish
Mix curd, grated beetroot, salt and pepper in a bowl.
Add roasted cumin powder and combine well.
Adjust thickness with a little water if needed.
Chill briefly and garnish with coriander before serving.
