This vegetable stir fry with tofu is a light, balanced meal made with colourful vegetables and crispy tofu cubes. It’s seasoned with a simple soy-based sauce and comes together quickly in a single pan.
1 cup firm tofu (cubed) 1 tbsp cornflour 2 tbsp oil 1 bell pepper (sliced) 1 carrot (julienned) ½ cup broccoli florets 2 cloves garlic (minced) 1 tbsp soy sauce 1 tsp vinegar 1 tsp chilli sauce Salt and pepper to taste Spring onions for garnish
Coat tofu cubes lightly in cornflour. Pan-fry in oil until golden on all sides. Remove and keep aside.
In the same pan, add garlic and stir until fragrant. Add all vegetables and stir-fry on high heat for 3–4 minutes.
Add soy sauce, vinegar, and chilli sauce. Mix everything well and adjust seasoning if needed.
Return the crispy tofu to the pan and toss gently to coat in the sauce.
Garnish with chopped spring onions and serve hot with steamed rice or noodles.
