Vegetable Salad Recipe: Light And Crunchy Anytime Meal

Vegetable salad is a simple, colourful dish made with fresh vegetables, lemon juice, and light seasoning. It works well as a side or a light meal on its own.

Ingredients

1 cucumber (chopped) 1 tomato (chopped, seeds removed) 1 carrot (grated or thinly sliced) ¼ cup capsicum (any colour, chopped) ¼ cup boiled corn or sprouts (optional) Juice of 1 lemon Salt to taste Black pepper to taste Fresh coriander or mint (for garnish) Dressing (optional): 1 tsp olive oil ½ tsp roasted cumin powder

Step 1

Combine all the chopped vegetables in a large bowl.

Step 2

Add lemon juice, salt, pepper, olive oil and cumin powder.

Step 3

Toss gently so everything is coated evenly.

Step 4

Garnish with coriander or mint and serve immediately.
