Vegetable Jalfrezi: Nutritious Recipe Perfect For Lunch Or Dinner

One of the go-to orders at an Indian restaurant, vegetable jalfrezi is an all-time favourite for all the right reasons. Made with assorted vegetables and a blend of spices, here’s how you can make it at home.

Ingredients

2 tablespoons oil ½ teaspoon cumin seeds 1 green chilli 1 onion 1 inch ginger 1 clove garlic 1 cup tomatoes 1 tablespoon tomato puree 1 teaspoon red chilli powder 1 teaspoon coriander powder ½ teaspoon turmeric powder ½ teaspoon cumin powder 1 cup mixed vegetables (capsicum, carrots, beans, peas) ½ teaspoon garam masala Salt to taste Coriander leaves for garnish

Step 1

Heat some oil and add cumin seeds and green chilli. Let the cumin seeds splutter.

Step 2

Add chopped onion, ginger, and garlic and cook until golden brown.

Step 3

Add chopped tomatoes and tomato puree and cook for 2-3 minutes.

Step 4

Mix in red chilli powder, coriander powder, turmeric powder, and cumin powder.

Step 5

Add all the chopped veggies and cook till tender. Season with salt and garam masala.

Step 6

Garnish with chopped coriander leaves and serve.
