Vegetable Idli is a healthy twist to traditional South Indian idli. It combines the softness of classic idlis with the crunch and nutrition of mixed vegetables, making it ideal for kids and adults.
1 cup idli batter (fermented) ¼ cup grated carrot ¼ cup finely chopped capsicum ¼ cup boiled sweet corn 2 tbsp finely chopped beans 1 tbsp coriander leaves (optional) Salt to taste (if not already in batter) Oil/ghee for greasing
In a bowl, mix fermented idli batter with all the chopped vegetables and salt (if needed).
Grease idli moulds with oil or ghee.
Pour the batter into each mould, filling ¾th full.
Steam in an idli steamer or pressure cooker (without whistle) for 10–12 minutes on medium flame.
Check with a toothpick - if it comes out clean, they’re done.
Unmould and serve hot with coconut chutney or sambar.
