Idlis, the South Indian staple are a popular and healthy breakfast options. Made with urad dal and rice, you can make them even more nutritious by adding chopped veggies and enjoying vegetable idlis.
1 cup rice 1/2 cup urad dal 1/2 cup chopped vegetables (carrots, beans, peas,onion) 2 tbsp chopped coriander 1 tsp ginger Salt to taste Water as required
Soak rice and urad dal separately overnight. Grind them together into a coarse batter.
Add salt and ginger and let the batter ferment till fluffy.
Chop assorted vegetables and mix it into the batter.
Grease idli moulds, pour the batter, and steam for 10-12 minutes.
Let the idlis cool slightly, and serve with sambar and chutney.
