Peanut curd is a delightful plant-based alternative to traditional yoghurt made from raw peanuts. With a mild, nutty flavour, it works wonderfully in smoothies, salads, or as a side dish.
1 cup raw peanuts 2-3 cups water (for soaking and grinding) 1-2 tbsp curd starter (or chilli stem as a vegan option)
Soak raw peanuts in water for 8-10 hours.
Drain and grind soaked peanuts with water to make a smooth paste and strain to extract peanut milk.
Heat the peanut milk, stir continuously until it comes to a boil and let it cool to lukewarm temperature.
Add the curd starter or chilli steam to the lukewarm milk, mix well and let it sit in a warm place for 8-10 hours.
Once set, use it like regular curd in salads or as a side.
