Vegan Christmas Plum Cake Made Easy, An Egg And Dairy Free Holiday Dessert

Rich plum cakes have always been at the heart of Christmas celebrations. Every single bite of the cakes brings in the Christmassy vibe like nothing else. This winter, how about giving it a vegan twist with plant-based alternatives to eggs and butter? Here’s the recipe for the vegan Christmas plum cake.

Ingredients

1.5 cups all-purpose flour 1 cup softened vegan butter 1 cup brown sugar 1 cup applesauce 2 cups mixed dried fruits (plum, raisins, currants, and dates), 1 cup of chopped nuts (almonds, walnuts, pecans) 1 cup orange juice 1 teaspoon baking powder ¼ teaspoon baking soda 2 teaspoons ground cinnamon ½ teaspoon ground ginger ½ teaspoon ground nutmeg ½ teaspoon ground cloves ½ teaspoon salt 2 teaspoons vanilla extract

Step 1

Prepare the dry fruit mix by soaking the dried fruits in orange juice for at least a few hours. Line a baking pan with a baking sheet and keep it aside.

Step 2

Cream the softened vegan butter with brown sugar in a mixing bowl until light and fluffy. Add the applesauce and vanilla extract and mix well.

Step 3

Add the dry ingredients (flour, baking powder, baking soda, salt, and spices) to the wet ingredients. Mix well to form the cake batter.

Step 4

Cover the soaked dried fruits with a little flour and mix them with the cake batter. Mix well before pouring it into the baking pan.

Step 5

Bake it for about 1.5 hours at 180°C in a pre-heated oven. Once it is out of the oven, allow the cake to cool completely in the tin.

Step 6

Poke a few holes in the cake and pour some extra orange juice on the cake. Allow it to absorb the flavour and serve.
