Veg Thai green curry is what you need to prepare on weekends to experience food coma and get into a state of deep sleep after eating. Pair this curry with rice, and you have a comforting meal that you would like to repeat for dinner. Check out the recipe.

Ingredients

For Green Paste ½ cup coriander leaves 2 stalks of lemongrass 1 green chilli ¼ cup shallots 2 tsp coriander seeds 1 tsp cumin seeds ½ tsp lemon zest 1 tsp soy sauce 2-3 kaffir leaves 3-4 garlic cloves 1-inch galangal

Ingredients

For Curry 2 cups water 2 tbsp coconut oil 1 cup coconut milk Salt to taste 2 tbsp Thai basil leaves ⅓ cup baby corn, carrots ¼ cup French beans, bell peppers ½ cup potatoes, mushroom 7-8 Thai pea eggplants

Step 1

Add everything mentioned for green curry paste into the food processor. Blitz and turn ingredients into a coarse paste.

Step 2

Heat coconut oil in a pan and coriander saute seeds, cumin seeds, and the green paste for a minute..

Step 3

Add all the chopped vegetables into it along with water. Cook until vegetables are tender.

Step 4

Pour the remaining spices and coconut milk. Cook until a gentle boil comes.

Step 5

Simmer the ingredients on a low flame, and add some chopped basil leaves. Turn off the heat, and enjoy the curry with rice.
