A wonderful snack that blends the richness of idlis with the flavour and benefits of mixed vegetables. The batter for this idli is pretty simple to create.
½ cup rice semolina ¼ cup beaten poha ¼ cup urad dal Salt, to taste ½ cup finely chopped mixed vegetables ¼ cup boiled green peas ½ tsp urad dal ½ tsp mustard seeds 3-4 curry leaves 1 ½ tsp green chilli, chopped Salt, to taste Oil, for cooking
Wash and soak the idli rawa, poha and urad dal in enough water in a deep bowl for 2 hours and drain well. Grind into a paste.
Transfer the mixture to a large mixing bowl and season with salt. Cover and set to ferment for 6 to 8 hours.
Heat the oil in a large nonstick pan, then add the urad dal, mustard seeds, and curry leaves. Sauté for a few seconds over medium heat.
Add green chillies, mixed veggies and salt and sauté for 2 to 3 minutes over medium heat. Keep aside.
Pour 1 tbsp of idli batter into each oiled idli mould. Place 1 tsp of the prepared veggie stuffing on top of the idli batter. Add some more batter on top.
Use a steamer for 12 minutes. Allow the idlis to cool before removing from the mould.
Serve the vegetable-stuffed idlis hot with sambhar and coconut chutney.
