Veg Manchow soup is a spicy, Indo-Chinese soup loaded with vegetables, garlic, and pepper, and topped with crunchy fried noodles. Best for chilly evenings or when you want something hot and tangy, this easy homemade version brings restaurant-style flavour directly to your bowl.
1 cup finely chopped beans, cauliflower, and carrots 2 tbsp finely chopped spring onion 1 tbsp finely chopped garlic 1 tsp finely chopped ginger 1–2 green chillies, finely chopped 2 tbsp soy sauce 1 tbsp vinegar 1 tsp red chilli sauce (optional) 4 cups vegetable stock or water 2 tbsp cornflour + 3 tbsp water 1 tbsp oil Salt and black pepper to taste 1/2 cup fried noodles (for topping) Fresh coriander, chopped, for garnish
In a pan, heat 1 tbsp oil and add chopped ginger, garlic, green chillies and spring onion whites. Sauté them until fragrant.
Add 1 cup of mixed chopped veggies, such as beans, cauliflower, and carrots. Stir-fry these over a high flame for 3 to 4 minutes, keeping them slightly crunchy.
Add 4 cups of vegetable stock or water and add 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tsp red chilli sauce, salt and pepper.
Let the mixture boil over a lower flame. Add cornflour slurry slowly, while stirring constantly to avoid the formation of any lumps.
Let it boil for 3–4 minutes until the flavours mix. Adjust the seasoning and spices as desired.
Serve hot in soup bowls. Garnish it with fried noodles, spring onion greens and some chopped coriander for that extra crunch and freshness.
