Veg Kolhapuri Recipe: Spicy Veggie Delight For Dinner

Veg kolhapuri is a bold and spicy Maharashtrian curry made with mixed vegetables simmered in a rich, aromatic gravy. Infused with the fiery flavours of Kolhapuri masala, this dish is known for its deep red colour, robust taste, and rustic charm.

Ingredients

2 cups mixed vegetables 1 finely chopped onion 2 pureed tomatoes 1 tsp ginger-garlic paste 1½ tsp Kolhapuri masala ½ tsp turmeric powder 1 tsp red chilli powder Salt to taste 2 tbsp oil 1 tsp crushed kasuri methi 2 tbsp chopped coriander leaves ½ cup water (as needed)

Step 1

Heat oil, sauté onion and ginger-garlic paste.

Step 2

Add tomato puree, turmeric, chilli powder, Kolhapuri masala and cook till oil separates.

Step 3

Add boiled veggies, water and simmer for 5-7 minutes.

Step 4

Sprinkle kasuri methi and garnish with coriander.

Step 5

Serve hot with roti, naan, or rice.
