Vadodara-Style Sev Usal: Try This Gujarati Street Snack For Healthy Munching

Sev usal is a beloved snack popularly sold in the streets of Vadodara, Gujarat. Made with sprouted peas curry, it is high in protein and the sev topping gives it a crunchy element. Here’s how to make sev usal.

Ingredients

1 cup white peas (soaked & sprouted) 1 onion 1 tomato 1 tbsp ginger-garlic paste 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder Salt to taste 2 cups water 1 tsp lemon juice For topping: 1 cup sev Chopped onions Fresh coriander leaves

Step 1

Pressure cook the sprouted peas with water and a teaspoon of salt.

Step 2

In the meantime, heat some oil and add cumin and mustard seeds. Add onion and saute till golden.

Step 3

Add ginger-garlic paste, tomatoes, and all the spices. Cook till you get a thick mixture.

Step 4

Mix in the pressure cooked peas with the stock and let it simmer.

Step 5

Once you get a thicker consistency, add a squeeze of lemon.

Step 6

Garnish with sev, onion, and coriander, and serve with toasted pavs.
